Celler Vell is pleased to offer this Artisan Cava to our customers, composed of 1/3 Xarel.lo and 1/3 Chardonnay - both fermented separately in 300 litre second-fill French oak "allier" barrels - the remaining third being made up of the noble Pinot Noir.
Next comes the “battonage” - the stirring of the lees (yeast) at the bottom, leaving them in suspension - to lend body and smoothness, to add the finishing touches to the wine which will remain in the container as long as necessary, usually between 6 and 8 months. Finally, the blending or “coupage” is carried out, the remaining third being made up of other noble varieties. Once bottled, a good period of aging of close to two years creates a Cava with a full colour, bouquet and flavour.
Intense gold. Very fine bubbles, whole, persistent crown. Complex bouquet which evokes nuts, toast and citrus notes. Light and well integrated, wood ageing from the first fermentation is perceived. Perfect for snacks, rice dishes and “surf and turf”.
